Jordan, where I live, is mostly a land-locked country. In the far south is the port of Aqaba located on the Red Sea. A beautiful, small city with perfect warm weather from October till early May. A perfect winter destination. Other than the small strip we have on the Red Sea, the only other sea is the Dead Sea; the lowest place on earth. A magical place but due to its saltiness, no fish lives in it!

Growing up, fresh fish was not widely available as it is these days. I don’t remember it ever being a staple on our dinning table as it is on the tables of seacoast countries. I actually had to acquire the taste for fish as a grown-up! And still, I haven’t incorporated it into our menu as much as I would like to.

One of the ways we enjoy fish is having it baked! I have tried several recipes for baked fish and in the process adapted them to our taste. This Baked Fish recipe is our favorite. If you like your fish spicy, then add some finely cut chili peppers to the sauce.

We like baked Haddock (هامور) the most, but I have tried this recipe with several other fish varieties as well. The pictures in the post are for a variety called “Feris”, I am not sure what the English name is.

The portion below is for a 2-kilogram fish, adapt the ingredients according to the size of the fish you want to cook.


Baked Fish Recipe:

Preparation time: 5 min               Cook time: 45 min

Ingredients:

2          kilograms whole fish
10        cloves garlic
1/3       cup olive oil
1/2       cup fresh lemon juice
3          tablespoons dried basil
2          tablespoons dried dill
1          teaspoon cumin
1          teaspoon ground black pepper
1 3/4    teaspoon salt


How to prepare Baked Fish:

  • Clean and wash the fish well. With a sharp knife score the outside skin and flesh in diagonal stripes. Three stripes each side. Set aside.
  • In a bowl mix all of the other ingredients wells.

  • Rub the inside and outside on the fish with the sauce. Place it in a baking dish and pour any remaining sauce over the fish. Sometimes, I chop 2 potatoes in thin slices rub them with some salt and the additional sauce from the fish and through them in the baking pan with the fish.

  • Cover the pan with aluminum foil, sealing the edges.
  • Bake Fish in the oven at 350° for 35-45 minutes. The time varies according to the size of the fish.

I find this to be one of the easiest and most tasty ways to prepare baked fish. I f you don’t have dried dill at hand, you can substitute with coriander or thyme.

i live o the red sea in egypt and my very favorite fish is "feris" i dont know the english name either but wish i did :-) its so flaky and white. I had it from a resturant also and the sauce was simliar to asian syle with some kind of noodles it was so good I wih i knew how to make that. i am happy someone else knows about feris :-)
