Sweetened Condensed Milk Recipe

I recently received a request from a fan of my Arabic blog (www.fattoush.me) asking for the recipe of sweetened condensed milk.

I personally use sweetened condensed milk a lot. One of the things that bother me the most when I am cooking or baking is finding I ran out of stock of an ingredient I need or that it is expired. I hate having to rush to the nearest supermarket to fetch it! So years ago, I did some research, and luckily found that there are quite some items that you can substitute or do yourself at home. Sweetened condensed milk, is one of the ingredients that you can easily prepare.

The recipe for preparing sweetened condensed milk is quite basic and easy. It takes no more than five minutes, meaning faster that rushing to the supermarket (YEAY). Plus, the cost for preparing Sweetened Condensed Milk it at home is cheaper than buying it.

The recipe below yields about 11/3 cup of sweetened condensed milk, about the same quantity as is in one can.

Note: if you are using the sweetened condensed milk to sweeten your tea, you can opt to reduce the fat content by reducing the butter called for in the recipe. However, if you are using the condensed milk for preparing a dessert, examine the recipe you want to prepare before deciding if you want to reduce the butter or not.

Can you use a stick blender or a regular blender? I do not have a food processor.

I am sure as long as the mixture is liquid and no clumps any mixing method is ok. Trying is the only way you will know.

I noticed that powdered milk is used. Can't fresh cream be used instead? Since powdered milk is very prevalent in 3rd world countries off course that would be the ingrdient used.

Much rather use milk or cream. Any advice?

Melanie, if you are using a regular blender, use room temperature softened butter. Cream the butter and then add all the other ingredients and beat well. It takes a bit longer to prepare, but it should work.

I have never used cream. I know that some people prepare it using fresh milk. You mix about a liter milk with sugar and bring them to boil, then you reduce the temperature and simmer over low heat (stirring regularly) for a long time (1+ hour) until the mixture is reduced in size. I believe they add a little butter towards the end. but I have not tried that method and don't know the exact sugar and butter measurements; plus I heard it is somewhat tricky to master.
If you do happen to try it with fresh milk, would love to hear some feedback.

This is awesome! I just made it and it was extremely easy. I just made it in a blender, because like the reader before, I don't have a food processor.

What kind of powder milk can you use.

This sounds great, but not sure what kind of milk powder to use. Never used it before so buying that is new to me, thanks.

I use full fat powder milk. There is a 0% fat powder milk, but i have never tried preparing it with that.

Great recipe! I have one question: can the measures be adjusted to make less? I rarely use a whole can for anything and usually end up wasting a lot (whoch is one of the reasons I don't like buying condensed milk in the first place). Thank you!

can this be cold water canned in mason jars or can it be pressure canned or frozen? thank you

Seta Tutundjian said...

I have not tried canning it at all. So I don't know./ if you do try it hope you let us know how it goes!

Just like any other recipe, you can adjust the ingredients to make more or less. Good luck:)
